Yes, that should work. But if you have the tools to desolder & solder the EEPROM, don't you have the tools to read the EEPROM?

So replacing the Eeprom with one from a parts radio with known code could also work then I assume?

As far as I know the security code of BMW rebranded Philips head units like the PH7850 cannot be generated from the serial. Those selling radio codes use databases of known serial-code combinations, but if your head unit is not in it, you are out of luck. In theory a BMW dealer should be able to help you (BMW knows the code), but I don't know whether they can/will help if the head unit did not come with the car you own.
